Incredible Dark Souls 3 Sage Ring 2022. Its more damage for the cost of a few milliseconds which is better for mindgames as delaying attacks can be good for pvp. With dex so high you could probably afford to lose the sage ring, though you would see an incredibly slight drop in cast speed.
Minimizes backstab damage by 30%. +1 ring adds 35 dex, +2 adds 40, but you'll need to be in ng+ and beyond for those. Crucifixion woods bonfire is the one closest to the stone.
